Mashed Potato Candy

Mashed Potato Candy…sounds strange right? Yeah, ok it’s strange but it’s tasty.

This recipe comes from my Grandmother’s kitchen. (Depression babies are always creative.)

What You Need:

1 medium potato, cooked and mashed

1 pound confectioner’s sugar

Peanut Butter

Wax paper

What You Need to Do:

Mix mashed potato and confectioner’s sugar together until it forms a soft dough. (You can add a little extra confectioner’s sugar if need be.) Roll out on table and spread with peanut butter, as thick or thin as you like. Then roll dough and peanut butter up in a roll. Wrap in wax paper and refrigerate for 2 to 3 hours. Slice as wanted.

  1. I’m guessing confectioner’s sugar is what we call icing sugar – very fine and dusty and white?

    • Confectioner’s sugar is also known as powdered sugar.

      • Yes… it is what we call icing sugar… I am going to try this recipe even though it sounds rather strange… I think my son will like it and as he’s a poor hard-up student he’ll probably make it himself!
