Cooking Tips: Cheese

 

To make grating and shredding cheese easier put your cheese in the freezer first. For hard cheeses 15 to 20 minutes and softer cheeses 30 minutes.

When melting Swiss or Mozzarella add a little lemon juice or white wine to keep it from becoming stringy.

Store cheese in the bottom of the fridge and wrap it tightly in separate packages. Don’t mix your flavors!

Use a low temperature when melting your cheese, otherwise your cheese will get tough and stringy.
