If you are like the average American, one of your favorite foods as a child was Grilled Cheese. I know it was for me and as an adult it brings back fond memories of being a child and sinking my teeth into hot cheesy goodness in toasy, buttery delight. My mouth waters even now thinking about it.
As I have gotten older however, my love for grilled cheese has strayed away from the typical american cheese on white bread with bologna to more sophisticated versions of this childhood love. As my taste buds have grown, so have the possibilities for creativity: mozzarella and pepperoni, cheddar cheese and ham, swiss cheese and turkey, etc.
Recently, I fell in love with Curry. I know, some of you may be tired of hearing about curry but I maintain this combination of spices is one of the greatest food wonders of the world and the versatility is astounding. If you love curry then you know I’m right. In this passion for curry and discovering all the different things I can do with it, I created curried cream cheese. A delightful combination of cream cheese and curry powder. So simple and yet so perfect, so naturally, I have been adding it to everything.

And this is what I had:
Curried Cream Cheese on Potato Bread with a slice of Heirloom Tomato
I know, you’re saying; “Stop it! It’s just too much. Almost too good to be true.” And yet it is. It may sound terrible but there are times when I create something that makes me pat myself on the back, this is one of those times. Here’s how I did it…
What you’ll need:
2 oz softened Cream Cheese
1 TBS Curry Powder
2 slices Potato Bread
Butter
1 slice Heirloom Tomato
2 slices Cheddar Cheese
What you’ll do:
Heat oven to 400º and spray cookie sheet with non-stick cooking spray.
Butter outside of each slice of potato bread and place buttered side down on cookie sheet.
Mix cream cheese and curry powder in small bowl then spread generously on unbuttered sides of potato bread.
Place tomato on one of the slices of bread then cover each slice with cheddar cheese and bake for 8-10 minutes or until underside of bread is golden brown and cheese is melted.
Remove from oven then combine both slices of bread, to create a perfect sandwich of cheesy goodness inside and buttery heaven outside.
Devour.
Now, I prefer to cook my grilled cheese in the oven. It’s easy and the bread always comes out perfectly toasted and the cheese always melted and gooey. This would also work in a skillet however if that is your preferred method.
I love grilled cheese. It is, in many ways, the perfect food. So many possibilities. Like you’ve heard me say before, you are limited only by your imagination. Try it. You just may love it or maybe get inspired to try something different. Just get in the kitchen and create something that will make you want to clean your plate!
